Black Sesame-Brown Butter Rice Krispies Treats Recipe

Ingredients

  • 6 tablespoons unsalted butter
  • One 12-ounce bag mini marshmallows
  • 1/4 cup black sesame seeds
  • 2 1/2 tablespoons black sesame paste
  • 1 teaspoon red miso
  • 6 cups Rice Krispies cereal
  • 1/3 cup freeze-dried strawberry slices or haw flakes (optional)

Directions

  1. Crumple, then uncrumple a sheet of parchment paper, using it to line a 9-inch-square cake pan with some overhang. Smooth and press the parchment. Alternatively, grease the baking dish with butter or toasted sesame oil.
  2. Prepare the brown butter by melting the butter in a heavy saucepan over medium heat, whisking continuously until the butter turns golden and brown bits form at the bottom. This process should take at least 5 minutes. Ensure you achieve a nutty aroma without burning.
  3. Reduce heat to low. Add marshmallows and stir until completely melted, achieving a fluffy, cheese-like consistency without lumps.
  4. Incorporate black sesame seeds, black sesame paste, and miso. Mix well. Turn off the heat and add the cereal two cups at a time, stirring thoroughly. Optionally add freeze-dried strawberries or haw flakes.
  5. Transfer the mixture to the prepared pan. Flatten into an even square using another layer of parchment or a greased spatula. Allow it to cool enough to handle if needed.
  6. Let set at room temperature for about 30 minutes. Cut into 12 to 16 pieces using a sharp knife.
