At Butter’s BBQ in Sinton, Texas, brisket is becoming increasingly expensive to serve. Owner and pitmaster Andrew Soto faced an unexpected challenge when he discovered the wholesale price of brisket rose by $1 per pound. This price hike comes amid rising beef costs nationwide.
Butter’s BBQ is recognized among the top 50 smokehouses in Texas, according to a reputable list by Texas Monthly. However, this distinction does not shield Soto from the impact of rising meat costs. He estimated that to maintain brisket on the menu profitably, the price would need to reach $51 a pound.
Currently, brisket alone accounts for 70 percent of Butter’s BBQ’s total grocery expenses. This significant financial pressure may impact menu pricing and customer access to this barbecue staple.
