Grace Pak, a skilled baker from New York City, found herself surprised upon learning that there were no official plans for a cake to celebrate the nation’s 250th birthday. Determined to fill this gap, she dedicated her efforts to creating a special cake for the occasion. Throughout the week, she worked on intricate details, including the representation of Lady Liberty’s torch.

Challenges in Cake Creation

The journey began when she inquired with the congressional commission responsible for organizing the celebratory events. The response was clear—no cake plans were in place. Pak was astonished at the omission and decided to embark on the ambitious project of crafting a bipartisan art piece.

This cake, which is comparable in size to a Mini Cooper, features flying chocolate Black Hawk helicopters, an eagle resting on a branch, and the arm of Lady Liberty made from Rice Krispies Treats covered in green fondant. Pak hopes to present this masterpiece during a ceremony at the Library of Congress.

Pak, 39, who has frequently showcased her talents on the Food Network and at elegant Plaza Hotel weddings, was aware that embodying the nation’s historical essence with flour and frosting posed significant challenges. However, she did not foresee the extent of political complexities involved.

She expressed a sentiment of disappointment, perceiving a lack of excitement for the 250th anniversary due in part to prevailing political circumstances. Nonetheless, she remains optimistic that cake could bridge these divides by bringing joy and unity across diverse perspectives.
